the parsis love their eggs. they have the best egg preparations, akuri being one of my favourites.
i learnt to make tamatar parida from nawaz in Shimla.
it's as simple as slowly sautéing garlic, onions and tomatoes till the mixture becomes super soft and caramelised. then add as many eggs to fry on top of the mixture as will cover the mixture. cook the eggs as much as you like.
enjoy with crusty bread as orange juice!
