contest: best couscous recipe



time for giving away a few cookbooks from my collection! do you have a great couscous recipe? share it in the comments section of this blog post and you could win one of three cookbooks i'm going to give away. there will be two rounds of judging. from all your submissions (and i hope there will be many!), i will choose three to test out. r1 and r2 will then pick the winner based on which one they like the most (and eat most of !). contest closes end of day sunday, january 15th. keep reading and watch the fun unfolding!

Hi Lulu, here is a simple couscous which is loved by my family...I usually serve it with roasted veggies...hope ur family enjoys it too...:)

Recipe:

For 1 portion of couscous(say 1 cup), you'll need 2 portions(2 cups) of stock(veg or chicken.I prefer chicken stock)

Heat the stock in a pan with 1 garlic clove, 2-3 sprigs rosemary, 3 sprigs mint leaves, lemon zest(from abt 1 lemon) and req salt and pepper-ground. Make sure u chop all the flavouring stuffs before adding to the stock. Simmer on low-med heat for about 5-10 mins to infuse the flavours.I sometimes add a spring onion to make the stock.

Place the couscous in a hotpack or bowl(I prefer hotpack). Pout the stock ,juice from a lemon into the couscous, cover and let stand for 5 mins or until the couscous absorbs all th liquid.Fluff up the couscous and serve hot with roasted veggies.

Forgot to mention...U can also add some olive oil for extra flavor towards the end.

Another couscous recipe from me again-fully indianised though...prepared on the lines of biriyani...not sure if it'll catch ur fancy...

Mushroom couscous biriyani ;)

Recipe:

Heat oil+ghee in a pan.Add 1 chopped onion, 2 g.chillies slit, a small bunch of mint leaves chopped and saute until translucent.
Add 1 tomato chopped and saute till pulpy.
Add 1 box of cleaned n sliced mushroom and saute till it leaves out moisture.
Add salt, turmeric and mix.
Add 1/4 cup of very THIN coconut milk,1 3/4 cup of water and let boil.
Add 1 cup of couscous and let ti come to a boil.Cover with a tight fitting lid.
Switch off flame and let stand until all the moisture is absorbed.

Serve with onion raita or thin kurma or egg kurma.

One reason may be you don't have many readers! Don't be offended - I have been following your blogs since sometime and your enteries have become sparse - both in terms of numbers and content. Your London, SF blogs were much more interesting. Just a feedback.
