
one of my favourite evening snacks is cheese toast, bombay ishtyle. all you need is two slices of bread, some butter, a fistful of grated amul cheese, another fistful of chopped onion, finely chopped coriander and a few chopped chillies.
butter the bread one one side and toast in a toaster oven. flip over, butter the other side. pile on the cheese, onions, coriander and chillies. if you like, you can mix these ingredients first and then pile on the mixture. sprinkle with red chilli powder if you want your cheese toast even spicier.
toast until the cheese just begins to melt. dig in! enjoy with a chilled glass of nimbu pani.

spicy cheese toast. everything about that sounds perfect.
I made this today for R - haven't eaten it since Madras :) He loved it. Since there is no Amul cheese, I substituted spicy pepperjack - quite delish.
That looks AMAZING! I'll try it for sure the next time I need a quite bite!
